I’m starting to rediscover local varieties of heirloom beans. These beans were developed for the climate here, many are becoming rare, and they are edible, so why not grow them. Anasazi, N.M. Appaloosa, Red Appaloosa, Zuni Gold (Four Corners Gold Bean), Rio Zape, and Four Corner’s Runner Bean are the varieties i will be growing in 2012.
Possibly the Bolita bean too, but i’m not sure yet. *I have now decided to add Dapple Grey as well (not in picture), since it is also related to the Zuni Gold and Anasazi bean.
On a related note, the other day i put together a mix of equal amounts of Zuni Gold, Anasazi, Bolita, and Rio Zape. I proceeded to cook them in a crockpot overnight, and the next day i had three bowls of them, because they were the best beans i’ve ever had in my entire life!
